For many people donuts bring back great childhood memories, whether they be of an after school bakery treat or a summertime carnival. Those deep fried rounds may be reminders of good times and great taste but they are far from nourishing. This is when this raw doughnut recipe comes in and saves the day! Picture this, you’re sitting on top of a hill on a beautiful summer’s day with not a cloud in the sky, surrounded by your favourite people all munching on food out of a picnic basket… And you pull out a batch of raw vegan doughnuts. Now you’re all munching on these delights and the day could not get any better. For this recipe, all you need is a handful of super simple ingredients to blitz together and then you’re well on your way to creating some more amazing doughnut memories.

Ingredients:

2 cups oats 
1 cup shredded coconut 
4 tbsp chia seeds 
6-8 medjool dates 
2-3 dried figs 
1 tsp vanilla
3 tbsp nut or seed butter (almond, cashew, tahini etc.)
Pinch of salt 
3 tsp maple syrup*
1 tsp cinnamon

Method:

Soak the dates and figs in hot water.

Add the oats to a food processor and process until they become a fine, flour-like consistency.

Add the coconut and cinnamon and process further.

Add the dates, figs and chia seeds. Process until the mixture clumps together.

Now add the nut butter and process a small amount until the mixture is slightly sticky but easy to mould.

Take a handful of the mixture and roll it into a long cylinder then join the ends to form a doughnut.

Repeat until all the mix is used up.

Decorate with whatever your heart desires then let them set in the fridge for a few hours.
